Ingredients:  
Ingredients:  
2 9 inch round pans
2 cups flour
2 cups sugar
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 ½ cups of vegetable oil
3 cups grated carrots (small ones grate in blender)
4 eggs
2 tsp. vanilla
1 ½ cup raisins

Directions:
Directions:
In large bowl combine all the dry ingredients (first 6 ingredients)
Add oil, stir
Add carrots
Add eggs, one at time
Stir in vanilla
Stir in raisins
Grease and flour both pans
Bake at 350 for 40 mins for 2 round pans ( bake at 350 for 60 mins for sheet pan

Icing
4 oz soft cream cheese
¼ cup butter
2 cups confectionary sugar

Mix creams cheese & butter until soft, add sugar. (need a double batch for round pans)
