Ingredients: 2 lbs. Carne Asada Meat (get this from a good butcher, amount depends on how many people you serve) 1 to 1 1/2 bottles Beer (about 2 cups, Corona works well) Juice of 3-4 Limes 2 tsp. New Mexico Red Chile Powder 1 1/2 tbsp. Garlic Powder 1 tsp. Salt 1 tbsp. Pepper 1 tsp. Celery Seed 1 tsp. Adobo Seasoning (if available) 1 tbsp. Minced Onion 1 tsp. unflavored meat tenderizer 1 tsp. ground/crushed Rosemary

Directions:This is an easy one! Pour the beer and all seasonings into a large ziplock bag or large bowl (with lid). Note that all seasonings are to taste. You can add or subtract as much as you would like depending on your preference. Mix together ingredients as good as possible. Place the meat into the mixture and marinate for at least an hour or two. You can even marinate it overnight in the refrigerator if you prefer a strong taste.
Once done marinating, grill the meat until cooked medium well (most tender and juicy). While grilling the meat, place a few green onions over the meat to add more flavor. Once the meat is done cooking, you can grill the onions until soft.
Serve the carne asada and onions wrapped in a tortilla or as is! A great camping favorite! |
