20 lb. Fresh Turkey
1 small onion cut in quaters
1 carrot cut in 1/2
1 celery stalk in 1/2
1 lemon or Oange cut in quarters
1 bay leaf
2 stalks of fresh tyme

Directions:
Directions:
Remove neck and giblets from the neck and body cavity. Rinse whole turkey well with cold water, pat dry with paper towels, make sure it’s completely dry.

Rub turkey down with unsalted butter, inside and out, cut several little slits into the skin and place a tab of butter in the slits, salt and pepper Turkey inside and out.

Put onion, carrot, celery stalk, lemon or orange quarters, bay leaf and fresh tyme inside cavity.

Place turkey on a rack, breast side up, inside a wide pan, tuck back wings. Cover with foil, leave an air space between foil and turkey. Bake at 325 º allow 15-20 minutes per pound. Remover foil during last hour of cooking to allow for browing.

Remover from oven, let stand for 20 minutes before carving.
