3 large vidalia onions chopped
5-6 cloves of fresh garlic chopped
4 heaping tbsp. of sugar
4 heaping tbsp.of salt
pepper (cover top of pot)
1 bushel of fresh Parsley (if not fresh use 1/4 of large container of dry parsley)
1 bushel of fresh Basil (if not fresh lightly cover top of pot with dry basil)
¼ container of fresh locatelli cheese
5 cans of puree
1 can crushed tomatoes

Directions:
Directions:
Cover bottom of pot with oil, add onions and garlic,cook on high heat until golden brown, stir constantly ( about ½ hr.).

Reduce heat, add puree and crushed tomatoes, 1 can at a time, add 1 can of water for each can,stir well.

Return heat to high, add sugar and salt, stir well.
Cover top of pot with pepper, stir well. Add parsley and basil, stir well. Add locatelli cheese and stir well.

Cover pot with lid, bring to a boil. Let boil for ½ hr, stirring every 10 minutes. Lower heat to low/simmer with lid ½ covering pot, cook for 3 hrs.
