1 1/2 c. unsweetened cocoa powder, plus more for pans
3 c. all purpose flour
3 c. sugar
1 T. baking soda
1 1/2 t. salt
3 eggs
1 1/2 c. warm water
1 1/2 c. buttermilk (buy 1 pt.= 2 c.)
3/4 c. vegetable oil
1 1/2 t. pure vanilla extract

1. Heat oven to 350º. Butter 2- eight inch round cake pans, line bottoms with parchment; butter, and dust with cocoa. Or, you can make cupcakes.
2. In electrick mixer bowl, sift cocoa, flour, sugar, baking soda, baking powder, and salt. On low, stir in eggs, 1 1/2 c. warm water, buttermilk, vegetable oil, an dvanilla until smooth, about 3 minutes.
3. Divide batter between prepared pans. Bake, rotating once, until tester inserted in center comes out clean; 35 to 45 minutes for 8-inch layers or 20 to 25 minutes for cupcakes.
4. Let cakes cool on wire rack for 20 minutes, then remove from pans and cool completely.

Martha Stewart is amazing. This is a very moist chocolate cake that I like to use with the swiss meringue buttercream recipe that is also from Martha. It's a good thing!
