1 1/2 pounds of beef round or Swiss steak 1 inch thick
1/4 cup all purpose flour
Salt & Pepper to taste
3 tbsp. of vegetable oil
1 large onion sliced
1 large rib of celery sliced
1 clove garlic, finely chopped
1 (8oz.) can stewed tomatoes
1/4 tsp. dried crushed basil
1/4 tsp. dried crushed oregano
1/4 tsp. dried crushed thyme

Directions:
Trim and discard excess fat from around steak. Sprinkle flour on both sides of steak. Sprinkle with salt & pepper.
In a large skillet, heat oil add steak and over medium high heat brown steak well on both sides.
Place steak in a baking dish about (12x8x2 inches)
In the drippings in the skillet, lightly cook onions, celery, & garlic stir in un-drained tomatoes, basil, oregano, & thyme
Pour mixture over steak in baking dish. Cover lightly with foil
Bake in a 300 degree oven until steak is tender as mothers love d1 1/4 to 1 1/2 hours
Place steak on a hot platter keeping vegetables on top of meat. If necessary skin excess fat from juices then pour juices around steak, serve at once
