3/4 cup water
3/4 cup milk
3 eggs
1/2 tsp salt
1-1/2 cups flour
3 tbsp melted butter

Filling:
2 cans cream of chicken or mushroom soup
1/4 cup milk
1/4 cup dry white wine
4 cups cooked cubed chicken or turkey
1 (6 oz) can sliced mushrooms, drained
1/2 cup parsley, finely chopped
1 cup grated Swiss cheese
4 tbsp Parmesan cheese

Put crepe ingredients in blender and blend one minute. Scrape down sides and blend 30 seconds more. Heat 6-inch skillet until drop of water bounces on surface. Brush lightly with butter. Pour scant 1/4 cup of batter into skillet, tilting pan to coat bottom evenly. Cook until lightly browned. Turn and quickly brown the other side. Stack crepes with sheet of waxed paper between each, then cover and set aside. Make chicken filling. Combine soup, milk and wine. Stir in chicken, mushrooms, parsley and Swiss cheese. Heat to boiling then remove from heat. Assemble: spoon about 1/4 cup chicken filling across crepe, rollup. Place filled crepes in two greased 7x11-inch glass baking dishes. Pour remaining filling on top of crepes. Sprinkle with Parmesan cheese. Bake at 400º for 30 minutes, or make ahead and freeze. Thaw, then bake 45 minutes. Makes 6 servings.
