1 onion, chopped
2 1/2 cups chopped potatoes
1 1/2 cups chopped carrots
1 cup chopped celery
1 large bag each frozen broccoli and cauliflower
1 can cream of chicken soup
1 can cream of mushroom soup
1 pound velveeta cheese

Directions:
Directions:
Boil the chicken stock/water with bouillon cubes. Add the onion, potatoes, carrot and celery. Cook until done. Add the frozen veggies and bring back to a boil. Add the cream soups. Reduce heat and add the velveeta. Stir until cheese is melted and smooth. Can also add diced chicken or ham if desired.

This is a recipe that I got from a former co-worker at Iowa Methodist Medical Center in Des Moines. I've shared it several times since. One gal I gave it to told me that she used frozen mixed veggies instead of the broccoli and cauliflower.
