"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

Ingredients:
2 lbs. ground ham
2 lbs. ground pork or sausage
2 cups fine graham cracker crumbs
2 eggs beaten
1 1/2 cup milk
1 can (10 3/4 oz.) can condensed tomato soup
1 1/2 cups brown sugar
1/2 cup vinegar
1 tsp. dry mustard

Directions:
Combine meats, cracker crumbs, eggs and milk. Mix thoroughly. Shape into balls, using an ice cream scoop. Place in a 9 x 13 pan. Blend soup, brown sugar, vinegar and mustard until smooth. Pour over ham balls. Bake uncovered in a 325 oven for 2 hours, basting 3 times. Do not cover. Note--wait 1 hour before basting the 2nd time. Makes 3 dozen with ice cream scoop or 21 1/2 cup balls. If you make 1/2 of a recipe, you'll have 15 1/3 cup balls for a 9 x 13 pan.
