large pkg. chicken thighs (10-12)
flour to dip chicken
1/3 cup or more of Oil
Salt/Pepper

1 can sliced Pineapple (1 lb. 4 oz.)
1 cup sugar
2 T cornstarch
3/4 cup Apple Cider Vinegar
1 T Soy Sauce
1/4 teasp. ginger
1 chicken bouillon cube
1 Large Green Pepper-sliced

Directions:
Directions:
1.Wash Chicken, pat dry, coat with salt, pepper, and flour.

2.Heat oil in large skillet. Add chicken a few pieces at a time and brown on all sides. Remove from skillet and arrange pieces in shallow roasting pan.

3.Pre-heat oven to 350.

4. Make Sauce:
Drain pineapple, pouring syrup into a 2-cup measure,Add water (if needed) to make 1 1/4 cup
.
5.In medium saucepan, combine sugar,cornstarch,
syrup, vinegar, soy sauce,ginger and bouillon cube.
Bring to a boil, stirring constantly. Boil 2 minutes. Pour over chicken.

6.Bake uncovered 30 minutes, Add pineapple slices and green peppers (which have been sliced)
Bake 30 minutes more.

7. Serve with fluffy white rice.
(The sauce may be doubled.)
