Sweet Potatoes with Fresh Orange Recipe

4 large sweet potatoes, boiled
2 oranges. peeled
1 stick butter
1 C light brown sugar
1/2 C chopped pecans
1 T cornstarch
1 C orange juice
3 T maple syrup
1/8 t cloves
cooking spray

Serves: 8-10
Preparation Time: 30 minutes

Boil potatoes whole, then peel and slice 1/4" thick. Layer in 9"x13" pan that has been sprayed. Slice peeled oranges and place on top of potatoes. Melt butter and add sugar. Add pecans to butter mixture then pour over top of potatoes and oranges.
Sauce: Combine orange juice, syrup and cloves. Stir together over medium heat. Pour over all in baking dish. Bake at 375º for 15 minutes.

This recipe is from Regis Philbin's wife, Joy. She prepared it on his show. I made it for Thanksgiving and it is delicious. I only used 1 very small orange and it was great. My family loved it. It will be a Thanksgiving tradition for us now.
