Cake:

2 c.all-purpose flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 eggs
1 1/2 c. canola oil
2 c. grated carrots
1/2 c. chopped pecans(optional)


Cream Cheese Frosting:

1 lb. powered sugar
1 stick butter(soft)
8 oz. cream cheese(soft)
1 tsp vanilla

Pre-Heat Oven 350

Cake:
In medium bowl mix all above ingredients until well blended.Pour into three greased 9in cake pans.Bake at 350 for 35 to 45 minutes.To check for doneness use toothpick.

Let cakes cool completely on wire rack.

Frosting:
Mix all ingredients on high for 3-5 minutes.Frosting should be smooth without lumps.

Frost and stack cooled cakes.
