4 oz fusilli (spiral) pasta
2-3 T. olive oil
1/2 lb. chicken breasts, cut into bite-sized strips
1 1/2 C red and/or green pepper, thinly slivered
2 green onions, minced
2 t. fresh ginger, minced
1 clove garlic, minced
1/2 C pine nuts
1 T. soy sauce
1 T. lemon or lime juice
salt and pepper to taste

Serves: 2-3
Preparation Time: 30 minutes

In large pot, cook pasta according to package directions. Set aside. In a skillet or wok, heat oil. Saute' chicken with bell pepper and onions for 3 minutes. Add ginger, garlic & pine nuts. Saute' 3 minutes more or until nuts are golden.
Add soy and lemon or lime juice. Remove from heat.
Drain pasta well, do not rinse. Place pasta in large bowl.
Pour chicken mixture over pasta. Add S & P to taste.
Toss well to coat with chicken mixture. Serve at once.
