16 eggs
1/4 C melted butter
2 t salt
1/2 t pepper
1 C evaporated milk



Mushroom-Beef Sauce:
1/2 lb chipped beef, shredded
1/2 lb mushrooms, sliced
1/4 C butter
1/4 C flour
1 qt. hot milk
1/2 t salt
1/4 t pepper
4 slices bacon, cooked and crumbled

Preparation Time: 30 minutes

Combine eggs, butter, evaporated milk, salt and pepper. Cook as you would scrambled eggs until slightly set but still very soft. Set aside.

Mushroom-Beef Sauce:
Saute' beef and mushrooms in butter until mushrooms are tender. Stir in flour and bacon. Add milk, salt and pepper.
Stir and cook until sauce is slightly thickened.
In 9x13" pan, alternate layers of eggs and mushroom-beef sauce. After assembled, cover and refrigerate overnight.
Bake at 275º for 1 1/2 hours, covered.
If not making ahead, cover and bake at 275º for 1 hour.
