3 green onions, chopped
2 tbs butter
5 eggs
3 (10 oz.)pkgs. frozen chopped spinach,thawed and squeezed dry
1 1/2 cups crumbled feta cheese
1/2 cup cottage cheese
16 sheets of phyllo, thawed
3/4 cup butter melted

Directions:

Pre heat the oven to 350º
Saute the onion in butter and combine with eggs, spinach and cheeses. Set aside.
Trim phyllo to fit into a 13 x 9 pan, and place one layer, brush with butter, another sheet,more butter. Have 8 layers on the bottom. Spoon the filling over the sheets and then top with 8 more layers of phyllo and butter.
Bake for one hour and 10 minutes, until golden and cut into squares.

I like this version because of the mix of cheeses. This is one of the things that Mike and I love to have for dinner. It's actually his recipe.
