3 eggs
1 cup vegetable oil
2 cups granulated sugar
2 tsp. vanilla
2 cups coarsely shredded zucchini
1 can (8 oz.)crushed pineapple well drained
3 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. baking powder
2 tsp. ground cinnamon
3/4 tsp. ground nutmeg
1 cup finely chopped walnuts
1 cup raisins (optional)

Directions:

Preheat oven to 350°. Grease and flour two 8x4" loaf pans.

Beat eggs, add oil, sugar and vanilla and continue beating until mixture is thick. With spoon, stir in zucchini and pineapple.

Combine flour, soda, salt, baking powder, cinnamon, nutmeg, walnuts and raisins. Stir gently into zucchini mixture just until blended

Divide batter equally between prepared loaf pans. Bake about 1 hour or until wooden pick inserted in center comes out clean. Cool in pans about 10 minutes. Turn out on wire racks to cool thoroughly.
