1 c. flour
2 T. sugar
1 stick butter


Filling:
1 c. water
1 T. butter
1 c. sugar
5 T. flour
4 egg yolks
3-4 T. lemon juice


Meringue:
4 egg whites (room temperature)
6 T. sugar
dash of salt

Preparation Time: 1 hour

Pre-heat oven to 350º. Pie Crust: Sift together flour and sugar. Work in butter with hands and pat into an 8 inch pie pan. Bake for 30 minutes or until pale brown
.
Filling: In a double boiler add water and butter. Mix sugar, flour, egg yolks, and lemon juice and add to double boiler. Cook until filling thickens (about 20-30 minutes). 1 T. flour can be added to thicken if needed. Stir often. Pour into pie shell.

Meringue: Beat egg whites, sugar and salt until stiff. Place meringue on top of pie. Brown in oven - approximately 10 minutes. Refrigerate before serving.
