Black-eyed peas 1 lb dry (Gramma's choice)
or
White navy beans (Holly's preference);
Leftover ham hock from Christmas Eve;
1 Onion, chopped;
1 T Olive oil;
Chicken Broth (4-6 Cups or enough to cover ham hock);
4 Carrots;
4 stalks Celery;
Thyme,salt and pepper to taste;
Assorted coins wrapped in foil

Pressure cook the peas or beans. In the meantime, saute onion in large soup kettle. Add ham hock and chicken broth to cover and simmer until meat is falling off the bone. Remove ham. Discard bone. Cut ham into bite-size pieces. Chop carrots and celery. Add carrots to broth; simmer about 10 minutes, then add celery. Simmer 5 minutes Then add cooked beans. Stir thoroughly and add salt, pepper and thyme to taste.

One year Gramma asked me whether I was making black-eyed peas for New Year's Day. I asked her why would I be making that? She told me it was tradition and that a dime wrapped in foil was put in the pot and whoever got it would have good luck for the New Year. We adopted this tradition but I put a foil wrapped coin in each bowl. I didn't want to deal with the tears if someone didn't get one!
