1 large cauliflower
1-2 tablespoon olive oil
salt & pepper to taste

Directions:

Cut cauliflower into florets & toss with oil, salt & pepper in a large bowl. Spread them on a baking sheet, with parchment paper on it. Try not to let them touch, but I have.
Roast in a 450F oven for 25 -30 minutes, uncovered. Stir to turn over half way through. Bake until crusty brown in places. Great hot, good at room temp. You can toss sliced almond, or lemon zest, but I like them just the way they are.
