PAM Spray
2 T. Olive oil
2 T. Butter
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium sweet onion, chopped
½ cup mushrooms, thin slices then halved
3 slices cheddar cheese, broken into little pieces
1 Doz. Eggs

Directions:
Directions:
In a heated cast iron skillet spray the PAM and then drizzle the olive oil and heat until smoking, add butter and stir until melted. Add the peppers and onion and cook until the onion is translucent, add mushrooms and cook until water from them has evaporated. Whisk the eggs together and add to skillet, mixture should be about 1 inch deep. Stir until the eggs begin to cook. Add pieces of cheese on top and allow forming light crust on bottom. Remove from stove and put under the broiler to finish cooking until all the eggs are set. Place inverted plate over skillet and turn upside down to remove Frittata from skillet. Cut into pie shapes and serve with a salad.
