I lb. Ground Meat
2 Table Spoon of Olive Oil
1 Bell Pepper-Chopped
1 Medium Onion- Finely Chopped
1 Stalk of Celery- Finely Chopped
A few large cloves of garlic minced
1 cup of red wine
1 28 oz can Puree
3 28 oz cans Sauce
1 small can of Paste
Fresh Parsley
2 Bay leaves
1 Tsp sugar
Italian Seasoning

Brown the meat in a large sauce pot with olive oil. As it begins to brown add next 4 ingredients. When meat is browned and the vegetables are softened deglaze with wine. Add the sauce, puree, paste parsley, Bay Leaves, sugar and seasoning. Bring to boil uncovered. Cover and reduce heat to a simmer. Cook for 2 hours. Taste test and add seasoning to your taste as it simmers. Stir occasionally.

This is a basic recipe that I got from my mother that allows the opportunity for you to fine tune. If you prefer a sweeter sauce you can add a teaspoon of sugar. You can also brown some lamb neck bones and cook in sauce. Be creative and chop a few ounces of pepperoni in the sauce as it simmers. A few roasted red peppers adds dimension to the sauce. A quarter cup of good fresh Romano thickens the sauce a bit. It can also be cooked with Italian Hot Sausage or Sweet Sausage depending on taste.
