4 c coarsley chopped apples
2 c white sugar
1/2 c canola oil or all vegetable
1 c chopped walnuts (optional)
2 eggs well beaten
2 tbsp. vanilla
2 1/2 c flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp salt
2 tsp. nutmeg

Directions:
Mix all ingredients in order given. Bake in a well greased and floured bread pan or bundt pan which ever you prefer. Bake at 350º for 1- 1 1/2 hours or until done.
