1 Bunch (16 oz) asparagus, ends trimmed
5 Tsp apple cider vinegar
2 Tbsp walnut or olive oil
2 Tsp grated orange peel
1/8 tsp ground black pepper
2 Tbsp walnuts, coarsely chopped

Directions:
Directions:
Pour water to 1/2" deep in a large skillet. Add 1/2 tsp salt (or not) and bring to a boil over high heat.

Add the asparagus, and cook, until tender-firm, 4-7 minutes. Drain in a colander, and cool under cold running water. Drain, and lay on a paper towel-lined plate to dry.

In a small bowl, whisk the vinegar, oil, orangte peel, pepper and reamining 1/8 tsp salt (or not). Remove the asparagus to a platter, spoon the vinaigrette over the top, and sprinkle with the nuts. Serve at room temperature or chilled.
