1 1/2 C.sugar
1 Can (15oz) diced beets ,drained
1 C. vegetable oil
3 eggs
1/2 C. cocoa
1 tsp. vanilla
1 3/4 C. flour
1 tsp baking soda
1/2 tsp, salt
FROSTING
1 C. butter, softened
1 C. sugar
3/4 tsp. vanilla
1/2 C. warm milk

Directions:
Directions:
In a large mixing bowl, beat the sugar, beets, oil, eggs, chocolate & vanilla until well blended. Combine flour ,baking soda & salt; gradually beat into sugar mixture until blended. Pour into a greased & floured 10 in. fluted tube pan.
Bake at 350º for 45 - 55 min.or until a tooth pick inserted near the center comes out clean. Cool for 10 min. before removing from pan to wire rack.
For Frosting / In a large mixing bowl beat 1 C butter until fluffy, beat in 1 C sugar & 3/4 tsp vanilla. Gradually beat in milk, 1 T. at a time until smooth. Frost top & sides of cake.

Don't tell anyone this cake has beets in it! They don't flavor the cake, except to make it nice and moist!
