2 tbsp. olive oil
1 sm. green paper cut in ¼ in pieces
1/2 c. chopped onions (1/4 in cut)
1 c. crushed tomatoes
1/2 tbsp. curry powder
1/2 c. light coconut milk
1/4 tsp. black pepper
1 bag Jumbo frozen pre-cooked shrimp ( From Aldi)
1 tbsp. lemon juice
Salt to taste

Heat oil in a large saucepan, stir-fry onions for about 2 minutes till softened a little bit. Add crushed tomatoes and cook till all the water has evaporated from the sauce then add curry, salt, pepper and green pepper to the sauce. Stir till everything is mixed well. Add coconut and lemon juice, cook for another 2 minutes or until the sauce is thickened. Lastly, add the shrimp and increase the heat a little bit, cook for few minutes, do not overcook the shrimp as they will become harder(they are pre-cooked) , cook just enough to have the sauce take on the shrimp flavor. Pour it over cooked brown rice or eat it with a flat bread/pita bread/chapatti.
