1 T olive oil
5 green onion, thinly sliced
3 garlic cloves, minced
2 lb. ripe tomatoes or 4 pints large cherry tomatoes, peeled, seeded, and diced
1/2 t kosher salt
1/4 t. fresh ground pepper
1 lb. penne pasta
1 c crumbled feta cheese
15 kalamata olives, pitted, and coarsely chopped
2 T. chopped Italian parsley

Heat the olive oil in a large saucepan over medium-high heat. Add the onions and garlic and cook until soft, about 3 minutes. Add the tomatoes, salt, and pepper. Bring to a boil. Reduce the heat and simmer 15 minutes

Cook the pasta according to the package directions. Drain in a colander. Add to the tomato sauce and cook 1 minute. Transfer to a serving bowl and add the feta, olives, and parsley. Toss to mix.
