4 c. bread flour
1 packet instant dry yeast (2 1/4 tsp)
1/4 c. sugar
1/3 c. nonfat dry milk
1 T. instant mashed potatoes
1 1/2 c. uncooked rolled oats
2 1/4 tsp. salt
1 3/4 c. water
1/4 c. vegetable oil

Directions:
Directions:
Combine all ingredients. (If using active dry yeast instead of instant, dissolve yeast in 1/4 c. water.) Mix by hand or in mixer until dough comes together. Turn onto a floured surface and knead, adding more flour or more water as needed. The dough should be slightly tacky. Too much flour will make a tough bread.

Place in greased bowl, covered, and allow to rise until doubled. Punch down, allow to rise again until doubled. Shape into desired form (rolls, pan loaf, baguettes) and proof for 30 to 45 minutes. Bake at 375º for 25 minutes or until golden brown and delicious.

Let this bread cool for as long as you can stand it, but this bread is just delicious while still warm. If you're pressed for time, you can skip the second rise, but the bread won't be as flavorful.
