2 cans 29 oz. tomato sauce
12 - 15 ripe Roma tomatoes, chopped
3 medium onions, chopped
3 sprigs fresh cilantro, chopped
2 -3 tsp. fresh garlic, minced
1 or 2 jalapeņos, chopped
1 tbsp. dried Mexican Oregano
1/2 tsp. dried crushed red chilies
2 tsp. ground cumin
1 rounded tbsp. salt
Optional: 1 1/2 tsps. mixed dried peppers, hot or mild

Mix all ingredients well and place in covered container in refrigerator. Will keep for 4 weeks.
