1 1/2 pounds ground chuck
1/4 small onion, chopped
1/4 green bell pepper, chopped
about 15 crushed ritz crackers
2 eggs
1 Cup diced cheddar or Colby cheese
ketchup
1/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In a bowl, mix beef, onion, bell pepper, cheese, salt, pepper, eggs, and crackers.
Mix well with hands and transfer into a shallow casserole dish.
Form into an oval shape approximately 2 1/2 to 3 inches high and flatten top.
Pour about 1/2 ketchup on top and spread across entire loaf.
Sprinkle additional salt and pepper if desired
Bake in a 350 degree preheated oven for one hour and 15 minutes or until done in center.
