1 1/2 lbs of red potatoes
extra virgin olive oil
about 2 tbsp fresh rosemary
kalamata olives
Salt and pepper

Directions:
Directions:
Preheat the oven to 425.
Wash and quarter your potatoes. Put them in a large casserole dish with a high rim. Add around 15 to 20 olives depending on how much you like them.
Toss the potatoes and olives with about 1 1/2 cups of olive oil and your 2 tbs of fresh chopped rosemary.
Season everything with salt and pepper. I like good quality sea salt and cracked peppercorn with this type of thing. (It does make a difference to me)
Bake for about 30 minutes(or till they look done), stirring things up half way through.

You can do this recipe with other types of potatoes as well. Fingerling are good too! Sometimes if I have a lot of leftovers I make smashed potatoes with them the next night.
