2 cups cubed, cooked chicken
1/4 cup chopped onion
1 lb shredded cheddar cheese
1 cup sour cream
8 (8-inch) flour tortillas
1-1/2 cups chopped tomatoes
1/2 cup black olives

Directions:
Directions:
Preheat oven to 350º. In a medium bowl combine the chicken, onion 1/4 of the cheese and 3/4 cup sour cream. Spread mixture evenly among the 8 tortillas and roll them up. Place them in a lightly greased 9x13-inch baking dish in a single layer. Melt together the remaining cheese and sour cream. Pour over enchiladas and top with tomatoes and olives. Bake for 20 to 30 minutes.
