Ingredients: 1 package (10 oz) romaine salad greens or 8 cups torn romaine lettuce (3 heads romaine = 6 Servings; 6 heads = 12 servings, etc) 1 can (15oz) mandarin orange segments, drained 2 cups sliced strawberries ½ medium red onion, sliced thinly ¾ cup caramelized almonds (recipe below) Poppy Seed Dressing (recipe below)

Directions:Toss greens, orange segments, strawberries & onion with Poppy Seed Dressing and sprinkle with caramelized almonds. Makes 6 servings.
Caramelized Almonds Heat ½ cup sliced almonds & 3 Tablespoons sugar in nonstick skillet on medium-high heat. Stir frequently until sugar caramelizes. Spread caramelized almonds on greased baking sheet or on wax paper. Let cool. Break into small pieces. Can keep any leftovers in plastic bag in refrigerator.
Poppy Seed Dressing Dissolve ½ cup sugar, 1 teaspoon salt and 1 teaspoon dry mustard in ¼ cup wine vinegar. Add ½ cup olive oil, ½ cup canola oil and 1 Tablespoon onion juice; stir until well blended. Mix in 3 Tablespoons of Kraft Mayo (regular or light) until well blended. Stir in 1 Tablespoon plus 1 1/2 teaspoons poppy seeds. Makes 1 ¾ cups; okay to cut in half. Keeps well in refrigerator. |

Notes: I got this recipe from the Kraft Kitchens, who I think got it from Sunset Foods. Very yummy—quite the crowd pleaser. Does take some time to make the various components. Very quick to put together once you have them made. And in a blatant plug for my former employer, go to kraftfoods.com to get really tasty, very easy recipes.
