Mexican Strawberry Tartlets Recipe

1 stick Butter, cold and cut in chunks.
1 package "Maria Galletas" (Mexican Cookies).
1/2 Cup light brown sugar.
2 cups fresh strawberries, cut in chunks.
3 Tablespoons plus 1 cup granulated sugar.
1 8 oz. package cream cheese, softened.
1/2 cup sour cream.
1 package (dry) Whipped Topping Mix.

To make crust for tartlets:
Place cookies, butter chunks and brown sugar in food processor. Pulse only until coarsely ground.

Spray four small tartlet pans with non-stick cooking spray.

Press cookie mixture into pans covering entire surface and sides. Bake at 350º for 10 minutes. Remove from oven, cool completely, and carefully remove tartlet crusts from pans and place on platter.

Strawberry filling:
Mix strawberries and 3 tablespoons sugar in bowl and set aside.

In a large bowl, mix cream cheese, sour cream, 1 cup sugar and dry whipped topping mix. Fold in the strawberries carefully.

Spoon creamed mixture into each tartlet crust, garnish with a few slices of strawberry or mint leaves.
