2/3 c. hot water
2 T. I can't believe it's not butter
2 c. Stove Top Stuffing (chicken flavored)
1 (8 1/4-oz.) can crushed pineapple with syrup
4 chicken breasts, boneless, skinless, halves
pounded to 1/4-inch thick
1/2 med. green pepper (chopped)
1/2 med. red pepper (chopped
2 T. brown sugar
2 T vinegar
1/4 tsp. ground ginger

Heat oven to 400. Mix hot water, ICBINbutter in bowl. Stir in stuffing, pepper, half of the pineapple and syrup. Spoon stuffing evenly on chicken, roll tightly. Secure with a toothpick. Place in 9-inch square pan with remaining stuffing in the center. Mix remaining pineapple, syrup, sugar, vinegar, and ginger. Spoon over chicken. Bake 30 minutes or until thoroughly cooked.
