1 pkg yeast
1 c warm water
1 c milk
2 c two-day old white bread (about 6 slices)
2 1/2 c all purpose flour plus more for kneading
2 eggs
1 tsp salt

Directions:
Directions:
Dissolve sugar in warm water. Sprinkle with yeast and leave in a warm part of the kitchen until yeast becomes active. Combine yeast mixture with milk, flour, eggs and salt. Dough will be sticky. Cut bread into cubes and stir into mixture. Sprinkle with flour and mix in gently until mixture loses some of its stickiness. Sprinkle again with flour and cover with a cloth. Let rise for about 45 minutes, until doubled in size.
On lightly floured surface, dust dough with flour again then roll and knead it for about a minute. Divide dough in 3 parts and shape each into a log. Let dough rest for another 10 minutes.
Boil loaves in salted water (do not crowd them) for about 9 minutes, then roll them over and boil for a further 10 minutes, covered throughout.
When dumplings are done, remove them from the water and pierce them all over immediately with a sharp knife.
Use a strong thread to slice the loaves into 3/4 inch slices. Serve hot, topped with gravy or sauce.

I learned to make this by watching. I was told "add flour until it looks right". This recipe should make it easier for us Canadian-borns They freeze really well and you can reheat them in the microwave with a few drops of water sprinkled over them and a piece of plastic wrap loosely over them. You should get about 30 dumplings shaped kind of like an English muffin but damper.
