11 qts ripe tomatoes
8 large onions
4 green peppers

3 scant cups of white vinegar
3 tbsp of mixed spices (cinnamon sticks, cloves, allspice) tied in a cheesecloth bag
1 tsp celery seed
2-3 lbs brown sugar.

Directions:
Directions:
Peel tomatoes by cutting an X on the bottoms and placing in scalding water until skin starts to loosen. Cut into a large dice. Peel and dice onions. Dice peppers. Place in a crock or large glass or ceramic container and cover with ¾ cup of salt. Let sit overnight.

Drain well and place in large kettle with 3 scant cups of white vinegar, 3 tbsp of mixed spices (cinnamon sticks, cloves, allspice) tied in a cheesecloth bag. Simmer 2 hrs. Cool. Add 1 tsp celery seed and 2-3 lbs brown sugar.

Place in sterilized jars and seal.
Yummy.
