4 medium Yukon gold potatoes, thinly sliced
8 oz cooked cubed ham
3/4 cup chopped green pepper
1/3 cup chopped yellow onion
1-1/4 cups shredded Colby and Monterey Jack cheese

Directions:
Directions:
Preheat oven to 350º. Grease 2-quart baking dish. Mix everything together, reserving 1/4 cup cheese, bake 45 minutes covered. Bake uncovered about 15 minutes more or until potatoes are tender. Sprinkle with remaining 1/4 cup cheese and bake another 5 minutes or until cheese is melted.
