8 large potatoes, peeled and cubed
1 large onion, finely chopped
1/4 c. shredded carrot
1 tbsp. parsley
1 tsp. salt
1/4 tsp. pepper
2 cans cream of celery soup
1 cup heavy whipping cream
1-2 cups milk ( to desired consistancy)
2-3 tbsp butter

Directions:
Directions:
Use a large soup kettle, place cubed potatoes and chopped onion in. Add enough water to almost cover potatoes. Add salt and boil until potatoes are soft. Some will be mushy and some will be chunky. Add shredded carrot, parsley, and pepper. Lower temperature before adding the remaining ingredients, cream of celery soup, cream, milk and butter. Stir until completely warmed, and serve with a little fresh parsley on top.
