3/4 cup butter, softened
1/2 cup sugar
1 egg yolk
dash of salt
1 tsp. vanilla
1 3/4 cups flour
60 blanched almonds

Directions:
Directions:
Mix together, butter, sugar, egg yolk, salt, vanilla and flour until well combined. Pinch small amount of dough and form into small balls. Place on cookie sheet and flatten by pressing an almond into top. Bake in 300º oven for 20 minutes. These cookies should not brown. Cool on wire rack.

If you have trouble finding blanched almonds, you can blanch by boiling in water until skins loosen. Remove skins and dry.
