1 Spray Cooking Spray;
2 Large Potatoes, baked, cooled completely, and cut in half lengthwise
1/4 c bbq sauce
1/8 t hot pepper sauce
3/4 c cooked chicken breast, finely chopped or shredded
1/4 c shredded part skim mozzarella cheese
1/2 t fresh parsley, chopped for garnish

Preheat over to 425 degrees. Coat a baking sheet with cooking spray. Scoop half of the potato flesh out of each potato half. Combine bbq sauce adn hot pepper sauce in a cup and spoon over potato halves. Fill each potato half with 3 T of chicken; sprinkle each with 1 T of cheese. Carefully place potato skins on prepared baking sheet. Bake until cheese melts and potatoes are hot , about 8 mins. Sprinkle with parsley and serve. Yields 1 potato half per serving
