32 oz bag of frozen mixed vegetables; 8 oz bag of frozen cauliflower; 1 tbsp. minced onion; 1 can cream of celery soup; 1 cup real mayonnaise; 1 tbsp. vinegar; 1 lb softened velvetta cheese; 1 bag of crushed Ritz crackers; 1 stick of melted butter or margarine; and salt & pepper to taste

Mix together and cook the vegetables, cauliflower, and onion according to the package directions. Add soup, mayonnaise, vinegar, and cheese to hot vegetables. Salt and pepper to taste. In a separate bowl, mix butter and crackers together. Pour vegetable mixture into a 9x12 inch microwaveable dish. Cover with cracker mixture and microwave for 8 to 10 minutes.
