Ingredients:  
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 Tablespoons coconut oil/ghee blend (or use butter/olive oil)
4 - 6 cups fresh baby spinach
1 medium Spanish onion, cut in half and sliced
3 cloves minced garlic
2 cups chopped baby Portabello mushrooms
Fresh grated black pepper
1 large tin diced tomatoes (optional)

Directions:
Directions:
Saute chicken in oil until cooked through.

Add in onions, garlic and mushrooms.

Cook until tender.

(If using tomatoes, add now, and saute.)

Add in spinach and cook until spinach wilts.

Season with Sea Salt and fresh ground pepper to taste.
