1 cup cooked wheat berries
1 cup english cucumber, chopped
3/4 cup roma tomato, chopped (about 1-2 tomatoes)
3/4 cup red peppers, diced
1/2 cup sweet onion*
1/2-3/4 flat lead parsley, minced (I know that seems like so much but hey, this is tabouleh and makes the dish)
1-2 tablespoons extra virgin olive oil**
1/4 cup fresh lemon juice**
salt & pepper

* I planned on using a red onion but forgot to buy one but I was quite pleased with the sweet onion.
** This is a guesstimate as I did not write it down but I seem to recall measurements that approximate this. Suit to taste.

Soak wheat berries overnight. Remove from soaking water when ready to cook.
Bring 3 1/2 cups water to a boil. Add wheat berries. Cook for 2 1/2 to three hours. The berries will break open when they are close to tender.
When cool, mix additional ingredients and pour over wheat berries, toss and serve.
