3 T extra-virgin olive oil
2 T lemon juice
1/2 c red onion, thinly sliced
2 red apples, cored, thinly sliced
8 oz smoked trout, coarsely flaked
fresh dill, chopped
6 c trimmed watercress (about 2 large bunches) or arugula
salt and pepper
Directions:
Directions:
To make the dressing, mix 3 T olive oil, 2 T lemon juice and 1 T fresh dill. Season dressing with salt and fresh ground pepper.

Place watercress in a large bowl and add half of the dressing, toss to coat. Mound greens in center of each plate or bowl. Top salad with sliced onion, then fan apple slices, and top with trout. Spoon additional dressing over the salad.

Season to taste with salt and pepper. Garnish with dill springs.
