1 lb. peas
2 qt. water
1 branch celery
1 medium carrot
1 small onion
1/4 tsp. thyme
1 bay leaf
Dash cayenne pepper
salt & pepper
Ham bone or 1 - 2 C. chopped ham

Directions:
Directions:
Peel and dice carrot, celery and onion, place all ingredients in a kettle, boil hard for 20 min. then simmer until peas are soft (about 1 hr) Remove bay leaf. Pass through colander if desired, otherwise, stir, add ham meat. Excellent way to use a ham bone! Very thick, hearty soup.
