Ingredients:
Ingredients:
1-2 lbs. cut-up chicken or 2 split chicken breasts
1+ teaspoon of curry powder
1/4 Cup orange juice
2 tablespoons honey
1 tablespoon prepared mustard
2 teaspoons corn starch
1 tablespoon cold water
1/2 orange, peeled, sliced and quartered (can use mandarin orange slices from the can)

Directions:
Directions:
Sprinkle chicken with curry powder. Rub it into the meat. Place, skin side down in baking dish.

Combine orange juice, honey and mustard in a small sauce pan; simmer until blended. Pour over chicken. Bake at 375 degrees for 30 minutes. Turn and back 20 minutes longer.

Remove chicken to a warm platter. In small sauce pan, combine cornstarch and water. Stir in pan juices. Cook and stir until thick and bubbly. Add orange pieces. Heat 1 minute. Pour over chicken or serves separately to be spooned over rice (I often double the orange juice sauce so I have enough for the rice).

This is a very pretty “for company” recipe.
