2 T. butter ( melted)
2 T. flour
1/2 tsp salt
1/8 tsp pepper
2 C. milk
1 C. shredded American cheese
1 C. diced ham
1/4 C. onions
3 T butter
1/2 C. green pepper, (minced)
1 small can mushrooms
12 eggs
1/2 C mozzarella cheese
buttered bread crumbs

Directions:
Directions:
Melt 2 T butter, add flour, salt and pepper. Gradually stir in 2 C milk, cook until boils and thickens, then stir in 1 C American cheese. Set aside. Saute ham, onions, pepper and mushrooms in butter. Add eggs, cook and stir until set. Place eggs into greased 9 x 13" glass casserole. Pour cheese sauce over top. Sprinkle on 1/2 C. shredded mozzarella cheese.
Top with 1 1/2 C. soft bread crumbs & 1/4 C. melted butter. Cover & refrigerate 2– 3 hours or overnight.
Bake uncovered @ 350° 25 - 30 min
