olive oil
1 Tbsp garlic
1 1/2 cups RED lentils (available at stores that carry Middle Eastern or Indian food)
6 cups water
2 teaspoons thyme
1 teaspoon cumin
2 teaspoons salt

Directions:
Directions:
Cook garlic about a minute in a soup pan in a little olive oil. Add everything else, bring to a boil, reduce heat, and simmer for one hour.

Easy, kid-friendly, and a nice light dinner served with toasted pita (or pita chips), a Greek salad, and some beer.
