2 1/2 to 3 cups flour
1 Tbsp yeast (yes, it's more than for a usual loaf of bread--this is why it's much faster to make)
1 Tbsp sugar
1/2 Tbsp salt
1 cup hot water
1/2 Tbsp sesame or poppy seeds (optional)

Mix 1½ c flour with the yeast, sugar, salt. Pour in the hot water and beat 100 strokes. Stir in remaining flour till dough is no longer sticky. Knead 6-8 mins. Place in greased bowl, cover, let rise 15 mins, punch down, shaping into a round loaf. Place on a baking sheet. Cut an X ½" deep on top. Brush the top of the loaf with water, sprinkle with seeds (if using seeds). Place in middle shelf of a COLD oven. Place a cake pan of hot water on lowest shelf. Heat oven to 400 and bake 40-50 mins, until deep golden brown.

This is a basic homemade white bread, which will work whenever you might want Italian bread, or a baguette. The advantage of this bread is that it is very quick to make, compared to most yeast breads. Kids love to help make this!
