2 cups boiling water
1/2 teaspoon salt
1 cup sharp cheddar cheese, grated
1/2 stick (4 tablespoons) butter
1 cup milk
1 cup grits (Quick cooking, not instant)
4 eggs, beaten
1 pound pork sausage, crumbled, cooked and drained
yellow mustard to taste (optional)
dash of Tabasco

Directions:
Directions:
Lightly grease a 2 quart casserole dish. Bring salted water to a low boil. Carefully add grits and stir until thickened. As the grits cook, add milk to thin until done (about 7 minutes). Add butter and cheese. Add a little of the hot grits mixture to the beaten eggs, then add eggs to the grits, stirring constantly. Fold in cooked sausage, mustard and Tabasco. Bake at 350º for 25 minutes or until lightly browned.
